A very quick and easy dish - use our own local fish and produce for best results.

Fish in White Wine Sauce


Firm fish fillet

Olive Oil


3 Mushrooms - sliced

1 Shallot - chopped finely

 1 cup white wine

1 cup cream


Pan fry fish in either butter or olive oil. When fish is cooked, remove from pan and set aside.

In same pan, add a knob of butter and dash of olive oil.  Pan fry mushrooms and shallots until tender.

Add 1 cup white wine to pan - stir to reduce until thick and bubbly.

Add 1 cup cream to pan - bring to boil and thicken.

Pour over fish and serve with vegetables or salad.

Serves 1
