Macadamia nuts at their sweetest in a beautiful lemony biscuit

Lemon Macadamia Biscuits

Serves 6 - 8

125g unsalted butter, softened
½ cup caster sugar
2 teaspoons finely grated lemon rind
1 egg
1¼ cups self raising flour
200g Sandy Creek Macadamias Raw Macadamia Nuts,
roughly chopped

1. Preheat oven to 180C.
2. Line a baking tray with baking paper. In a large mixing bowl
add the softened butter, caster sugar and lemon rind. Using an
electric beater beat until the mixture is light and creamy. Add the
egg and continue beating until combined.
3. Add the self raising flour and chopped Sandy Creek
Macadamias Raw Macadamia Nuts to the butter mixture, and mix
using a wooden spoon until combined.
4. Roll tablespoons of the mixture into balls and place on a
baking tray about 12cm apart. Press down on each ball to flatten.
Bake for 15-20 minutes or until golden.
