Strawberry Cream Liqueur Crepes

Sweet or savoury dish.

Crepe Batter 3 eggs 300mls water 300mls milk 1 dessertspoon oil 2 1/4 cups plain flour Using a whisk combine eggs, liquid and oil. Then add flour, beating until smooth. Strawberry Cream Liqueur 1/4 cup brown sugar 2 tablespoons orange juice 1 tablespoon lemon juice 2 tablespoons Cointreau or Marsala 300mls whipped cream 1 punnet strawberries cut into pieces Boil sugar, lemon and orange juice, stirring until sugar is dissolved. Add Cointreau and remove from stove and cool. Add cream and strawberries. Fold mixture into crepes, top with more of the mixture and decorate with a large strawberry.
