Vegetable Frittatas

Ingredients:
- 1 carrot, grated 
- 1 zucchini, grated 
- 1 medium potato, grated 
- 1 onion, finely chopped ½ cup cheese, grated 
- 1 egg 
- 2 tablespoons plain flour 
- 1 tablespoon milk 
- Salt and cracked pepper to taste
- Finely chopped Fresh Herbs (optional)

Method:
Mix all ingredients together.
 Spoon a heaped spoonful into a hot oiled frying pan. 
Turn when golden brown. 
Frittatas should be the same size and shape as a pikelet. 
Try other vegetables!
