Zesty Banana Bread

This is a delicious bread to have at breakfast time, toasted with lemon curd!

Zesty Banana Bread

125g butter
220g brown sugar
2 eggs
½ teaspoon gr cinnamon
1 large banana, mashed
½ teaspoon vanilla essence
1 tablespoon shredded coconut
225g plain flour
1 teaspon baking powder
½ teaspoon bicarb soda
1 tablespoon milk

 

Pre heat oven to 160˚C. Grease and line a loaf tin (20 x 11cm).
Beat butter and brown sugar together in medium bowl until light and creamy.
In a separate small bowl, mix together eggs, cinnamon, banana, vanilla and coconut.  Pour into butter mix and beat until combined.
Sift together flour, baking powder and bicarb.  Fold into banana mix.
Spread into tin and bake for around 50 minutes or until cooked through (springs back when lightly touched).  Remove and allow to cool before turning out of tin.
To serve:  toast slices and serve with lemon curd.
