A Middle Eastern feast of fresh tomatoes, onion and green capsicum with organic chickpea gnocci, a pastured, local free-range poached egg, sprinkled with fetta and sweet paprika.

Charlies Hotel, Gympie

Pan seared Pork Loin steak with tomato and fetta tart, butter beans and chilli rosella jam.

Recipe:
serves 6 people

6 Rhodavale pork loin steaks
6 tablespoons CC's chilli rosella jam
3 limes juice
1 punnet of Farmer and Sun heirloom tomatoes
1 packet kenilworth fetta cheese
200g local butter beans
100g butter softened
2 cloves of Farmer and Sun Russian garlic finely chopped  
Salt and pepper to taste
1 batch sour cream pastry tart shells
Olive oil to shallow fry

Sour cream pastry:
125g plain flour plus extra for rolling
100g butter
60g sour cream
pinch of salt
(Alternatively you could use ready made shortcrust or even puff pastry)

Method:
Preheat oven to 180`c. Place flour, butter, sour cream and salt into food processor and pulse until smooth. Wrap dough in cling wrap and place into fridge for 10 minutes. Meanwhile grease six small flan tins. Remove the dough from the fridge and divide into six. On a floured bench roll each portion into a flat disk and carefully place into prepared tins, pushing the dough right into the edges. Use your rolling pin to remove excess dough by rolling it over the edge of the tins. Place into the fridge until firm. Mix the chopped garlic with half of the softened butter, spread on the bottom of the prepared pastry shells. Halve the cherry tomatoes, and slice the large tomatoes into wedges. Spread the tomatoes evenly among the tart shells. Crumble the fetta on top, season with salt and pepper and bake for 12-15 minutes or until the pastry is golden.
Meanwhile place a large fry pan on a medium heat. Place two tablespoons of olive oil into pan and cook pork steaks in batches until cooked making sure to season each one with salt and pepper. Place cooked steaks onto a baking tray, loosely cover with foil and allow to rest for ten minutes. Place the butter beans with remaining butter into the same fry pan and cook for 3-4 minutes until just tender, remove from pan. Pour any juice from the pork into the fry pan, place the beans into baking tray and place in oven to warm the pork and keep the beans warm. Squeeze the lime juice into pan and add the chilli rosella jam, stir until combined then plate your meals up.
Note: The tarts can be made a day ahead and just be reheated with the pork in the oven.

Mama Dee's Kitchen

Mama Dee’s Kitchen is a family owned and operated business providing quality food items such as sandwiches, smoothies, coffees and our made from scratch doughnuts.
We source food ingredients from a number of local sources. The best example is our signature sandwich called the Mary’s Treat which utilises a locally made sough dough bread roll, locally sourced Kenilworth cheese along with varied meats and salads from local suppliers and our own house made relishes and sauces to top it all off.
Open Tue-Fri from 9am-430pm and Sat 9am-1pm

Mary’s Treat
Locally sourced meat, seasoned and roasted in-house, served on a locally baked Sourdough bun and topped with Kenilworth cheese and housemade relishes. Ask us for this month’s flavours! $12
