Feijoa Muffins

Very easy melt and mix muffins that could be made with any spare fruit

Brenda and Tony’s easy Feijoa Muffins. This recipe was sent to us by some lovely customers Tony and Brenda, and has quickly become our go-to recipe for tour groups, as it has highlights feijoas, and is really easy as the name suggests!

....In the fruit season I put half a small feijoa cut side up in each muffin, and dust with raw sugar to make a crispy top...
I’ve also made these with choc-chunks for a change. 
They also freeze well. 
- 20 small feijoas ( or 250gm pulp) 
- ½ cup melted butter 
- 1 cup sugar 
- 2¼ cups plain flour 
- 1 egg 
- 1½ teaspoons baking powder 
- 1½ teaspoons baking soda 
- ½ teaspoon salt 
Mash feijoas (or blend , or unfreeze!)
Add sugar and egg and beat lightly. 
Add melted butter. Add sifted dry ingredients. Mix to wet. 
Cook for 20mins at 190oC (375oF).
